Veg Taquitos

Cultural Context

Veg Taquitos are a delightful twist on the traditional Mexican taquito, which typically features meat. Originating from Mexican street food culture, these rolled tortillas are filled with a variety of vegetables and beans, making them a popular choice for vegetarians and health-conscious eaters. They are often served with fresh toppings like avocado and lime, adding a burst of flavor. Today, Veg Taquitos are enjoyed not only in Mexico but also in many countries around the world, reflecting a growing appreciation for plant-based cuisine.

2

Grind the mixture until smooth to make the coriander sauce.

3

Store the sauce in an airtight container in the fridge for 2-3 days.

4

In a pan, heat 0.5 tablespoon oil over medium to high heat.

5

Add 1 tablespoon dried basil (or 10-12 crushed fresh basil leaves) to the oil.

6

Add finely chopped cabbage, 3 bell peppers, and tomato to the pan and mix well.

7

Add 0.5 cup boiled sweet corn and 0.5 cup boiled kidney beans (rajma) to the mixture and mix thoroughly.

10

Add fresh cream and optional tomato sauce to the mixture and combine everything well.
