1

Cut the ends off the fresh Yuca with a big knife.

2

Use a pairing knife to cut a slit into the skin of the Yuca.

3

Run the knife blade under the skin to peel off the waxy layer.

4

Continue peeling until the Yuca is completely peeled.

5

Slice the Yuca into fries, as thick or thin as you like, preferably on the thicker side.

6

Remove the center fibrous vein from the Yuca fries.

7

Salt the water heavily in a pot for boiling the Yuca.

8

Add the Yuca to the salted boiling water.

9

Boil the Yuca for about 20 to 25 minutes until fork tender.

10

Remove the Yuca from the water and place it on a sheet pan with paper towels to pat them dry.

11

Swap out the water for vegetable oil in a pot for frying.

12

Carefully add the Yuca fries into the hot oil in small batches.

13

Fry the Yuca fries until they take on a slight golden brown color, ensuring they are patted dry before adding to avoid oil splatter.

14

Serve the Yuca fries with your choice of dipping sauce, such as ketchup.
