Cut the pork shoulder into 4 equal pieces and season with salt and pepper.
Preheat an electric or stove-top pressure cooker to high with 2 tablespoons of avocado oil.
Sear the pork on all sides until deep golden brown for about 10 minutes (optional).
Add 1 cup of BBQ sauce and ¾ cup of water to the pot, covering about ¾ of the pork.
Seal the pressure cooker and pressure cook on high for 45 minutes.
Turn off the pot and let it sit for 10 minutes, then carefully release the pressure.
Allow the pork to rest for 10 minutes, then shred it using two forks, adding some cooking liquid to keep it moist.
Preheat the broiler to medium for the tomatillo sauce.
Peel the tomatillos, season with avocado oil, salt, and pepper, and broil until soft and blistered for about 8-10 minutes.
Blend the broiled tomatillos with the avocado, salt, and pepper until smooth and creamy.
Warm the tortillas in the microwave for 15 seconds wrapped in wet paper towels.
Add 2-3 tablespoons of the pork filling to each tortilla, wrap tightly, and secure with toothpicks.
Preheat air fryer to 370°F, spray the basket with avocado oil, and air fry the taquitos for 6-8 minutes, flipping halfway if needed.
Alternatively, bake the taquitos at 425°F for 15-20 minutes on a wire rack until golden brown.
