Slice the small peeled potato downwards using a sharp knife and set aside.
Slice 50 g of peeled carrot into 1 cm pieces and set aside along with 40 g of washed M tuo.
In a bowl, mix 1 tbsp of red pesto with 0.5 tbsp of breadcrumbs and set aside.
Lay out one large sheet of baking paper.
Layer the ingredients starting with the potato, then the M tuo, and then the chopped carrots.
Sprinkle 1 tsp of dried oregano over the layered ingredients, followed by a drizzle of olive oil.
Place one Arctic Royal Frozen red snapper fillet on top of the layered ingredients and grind over some pepper.
Spread the pesto and breadcrumb mixture over the top of the fillet.
Wrap the ingredients securely in the baking paper, ensuring to secure at each end.
Place the wrapped packet on a plate and microwave on high (800 watts) for 5 minutes.
After 5 minutes, check if the packet needs more time; if so, loosely wrap it back up and microwave in 30-second intervals until cooked through.
Once cooked, carefully unwrap the baking paper and sprinkle with freshly chopped basil.
