Wash the grapes thoroughly and remove the stems.

In a large pot, crush the grapes with a potato masher or fork to release their juices.

Add the sugar, lemon juice, cinnamon (if using), and salt to the pot with the crushed grapes.

Cook the mixture over medium heat, stirring frequently until the sugar dissolves and the mixture starts to boil.

Reduce the heat to low and let it simmer for about 30-40 minutes, stirring occasionally, until the mixture thickens.

To test the consistency, place a spoonful of the jam on a cold plate and let it sit for a minute. Run your finger through it; if it holds its shape, it's ready.
