Prepare ingredients: chop red cabbage, onion, and apple (using a food processor or knife).
Set the Instant Pot to sauté mode on hot.
Add bacon to the bottom of the pot and sauté until heated through.
Add a couple of tablespoons of butter to the pot to add fat.
Add chopped onions and diced apples to the pot and sauté for about 30 seconds to 1 minute.
Add the red cabbage to the pot, incorporating it with the onions and apples.
Add measured spices, including bay leaves and black pepper (about 1 tablespoon).
Add brown sugar (about ¼ cup) to the mixture.
Pour in about ¾ cup of apple juice, and a mixture of half apple cider vinegar and half red wine.
Optionally, add a shot of balsamic vinegar to the mixture.
Turn off the sauté function and seal the Instant Pot lid.
Set to high pressure for 7 minutes.
After cooking, allow the pot to depressurize naturally.
If the mixture is too liquidy, prepare a cornstarch slurry to thicken it before serving.
