In another bowl, beat the eggs until well combined.
In a third bowl, place the bread crumbs and mix in chopped parsley.
Dredge each kohlrabi piece in the flour mixture, shaking off excess.
Dip the floured kohlrabi into the beaten eggs, ensuring it's fully coated.
Coat the kohlrabi in the bread crumbs, pressing gently to adhere.
Heat vegetable oil in a large skillet over medium heat until shimmering.
Fry the kohlrabi pieces in batches until golden brown, about 3-4 minutes per side.
Remove the fried kohlrabi and drain on paper towels.
Sprinkle with salt and grated parmesan cheese while still hot.
Serve with lemon wedges on the side.
