Prepare the fresh filling by dicing onion and garlic.
Heat oil in a 12-inch cast iron skillet and brown the ground beef until it releases water and then browns.
While the beef is cooking, prepare the fresh filling by dicing shallots and chopping parsley, then mix with diced tomatoes in a bowl.
Once the beef is browned, create a space in the middle of the skillet, add more oil, and sauté the onions and garlic until fragrant.
Season the beef mixture with salt, pepper, paprika, and chili to taste.
Reduce heat and add about 50 grams of a mix of cheddar, Tilsitter, and E-Dame cheese to the beef mixture, stirring until melted.
Remove the skillet from heat and fill each tortilla with an eighth of the beef mixture and an eighth of the remaining cheese, folding them in half and pressing down slightly.
Heat more oil in the skillet and fry the tacos on medium heat until the cheese melts and the outside is crispy, cooking in batches as needed.
Prepare the sauce by dicing pickles and mixing them with ketchup and mayonnaise in a 1:1 ratio, adding two teaspoons of mustard and some dill, then stir well.
Fill the tacos with the fresh filling, add a bit of sauce, and squeeze fresh lime juice inside before closing them.
