Masala Fries

4 large potatoes
2 tbsp vegetable oil
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp garam masala
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh cilantro, chopped (for garnish)

Preheat the oven to 425°F (220°C).

Wash and peel the potatoes, then cut them into thin fries.

In a large bowl, toss the potato fries with vegetable oil until evenly coated.

In a small bowl, mix together the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, salt, and black pepper.

Sprinkle the spice mixture over the fries and toss until they are well coated with the spices.

Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the fries are golden and crispy.
