Cut 3 lbs of pork into small pieces, smaller than an inch.

Place the diced pork in a pot and add 1 tsp of salt.

Cover the pork with light beer and water, about an inch high.

Turn on the burner and bring to a simmer, covering slightly.

After about 20 minutes, mash the pork with a fork to shred it.

Pour in the sauce made from blending 1 lb can of tomatoes, 1/2 tsp oregano, 1/2 tsp black pepper, and 1/4 tsp cloves.

Let the pork cook in the sauce for 15-20 minutes to absorb flavors.

Prepare the pickled cabbage by shredding 1/2 red onion, 1 carrot, and 1/2 cabbage, and slicing 1/2 red bell pepper.

In a bowl, combine the shredded vegetables with 1 1/2 tsp salt, 1 1/2 tsp oregano, 1 tsp crushed red pepper, 2 cups water, and 2 cups apple cider vinegar.

Cover the mixture and refrigerate for 24 hours.

Make the dough by mixing 3 cups masa harina with 2 1/2 cups water and 1 cup light olive oil.

Shape the dough into balls the size of a goose egg, flatten them out, and fill with the pork filling.

Seal the filling inside the dough and flatten it out again.

Heat a non-stick pan on medium heat and cook the pupusas for 8-10 minutes per side.

After 10 minutes, flip the pupusas and add cheese on top of the one with cheese.

Cook for another 10 minutes until golden brown and serve with pickled cabbage.
