Let the dough rest in the fridge while preparing the curtido.

In another bowl, combine broccoli slaw, 1/4 cup apple cider vinegar, 1 teaspoon Mexican oregano, 1/2 teaspoon red pepper flakes, 1/2 teaspoon Redmond salt, and 1/4 cup jalapenos. Mix well and let it sit.

In a separate bowl, combine 1 cup mozzarella cheese and 1 cup Mexican blend cheese, mixing until it forms a paste.
