Add 1/4 cup plus 1 tbsp of brown mustard seeds to the vinegar.

Cover the jar with plastic wrap and set it in a cool dry place for 3 to 5 days.

After 3 days, check the mustard seeds; they should have plumped up and softened.

Use a spice grinder to grind 1/4 cup plus 1 tbsp of yellow mustard seeds into a fine powder.

In a mortar and pestle, add half of the brown mustard seeds from the jar and grind them to the desired consistency.

Combine the ground brown mustard seeds with the yellow mustard powder.

Add 1/4 cup of additional white wine vinegar, 2 tablespoons of honey, and a couple of pinches of salt to taste.
