1 pound ripe tomato
½ red onion
1 garlic clove
¼ cup olive oil
2 tablespoon red wine vinegar
½ lemon juice
1 teaspoon fresh basil
1 teaspoon fresh parsley

Start with the freshest juiciest tomatoes. Use any ripe tomato such as cherry, beefsteak, heirloom, or roma tomatoes.

Cut cherry tomatoes into halves or quarters. Slice heirloom or beefsteak tomatoes into 1/3 inch thick slices.

Arrange sliced tomatoes on a large plate.

In a bowl, mix together olive oil, red wine vinegar, lemon juice, finely diced onion, minced garlic, finely chopped basil and parsley, sea salt, and freshly cracked pepper to taste. Whisk thoroughly.
