Prepare 300g of cabbage and 300g of carrots, trimming off any tough parts.

Wash the cabbage by adding baking soda to water, stirring it in, then adding vinegar. Leave for 5 to 10 minutes, then rinse.

Wash the carrots by rubbing baking soda on the surface, leaving for 5 to 10 minutes, then wash thoroughly.

Cut the cabbage into squares about 2 to 3 centimeters in size, separating the pieces and rinsing them under running water.

Julienne the carrots into thin slices.

Place the sliced carrots in a bowl and add 1.5 pinches of salt and 1.5 tablespoons of extra virgin olive oil. Mix well.

Chop about 6 stalks of green onions, cutting the white parts into small pieces and the green parts into 2 cm long pieces. Add to the bowl.

Add 1 dried chili pepper (with seeds if desired), 1.5 pinches of salt, 1.5 tablespoons of soy sauce, and a touch of black pepper to the bowl. Mix well.

Heat a pan to medium-high heat and stir-fry the carrots for 2 minutes and 30 seconds without adding oil.
