Today, variations can be found across Latin America, often adapted to local tastes and available ingredients.

Place 2 cups of beans in the blender with a bit of the liquid from the beans that were cooked.
Blend the beans until smooth.
Heat approximately 1 tablespoon of olive oil in the pan.
Fry some chopped white onion until cooked, then remove from the pan if desired.
Pour the blended beans into the pan with the onion.
Add salt to the beans according to preference and mix well.
Check the consistency of the beans and remove from heat when ready.
Cut the tips off the plantains, then cut in half and peel off the skin.
Cut the plantains into strips.
Heat oil in the pan over medium heat and cover the surface with a layer of olive oil.
Once the oil is hot, place the plantain strips in the pan.
Flip the plantains once a brown crust has formed on both sides.
Serve the fried plantains alongside the refried beans and a piece of french bread with salvadorian sour cream.
