Clean 1 pound of pinto beans, picking out any broken pieces or rocks.
Rinse the beans well under water and add them into a pot.
Add 1/4 piece of onion and 2 garlic cloves to the pot, then cover with water.
Turn the heat to high and allow to come to a simmer.
Once the beans begin to simmer, lower the heat to medium-low and allow to simmer for 2 and 1/2 hours, checking a few times to replace any water as needed.
After 2 and 1/2 hours, sprinkle salt into the beans and mix.
Set a medium pan over medium-high heat and melt 1 tbsp of lard or bacon grease.
Add 1 pound of chorizo to the pan and break it up, cooking for 10 minutes or until fully cooked through.
Scoop in a few spoonfuls of the beans with their juice into the pan with chorizo.
Lower the heat to low and mash everything together until it reaches the desired consistency.
Pour in a bit of pickled jalapeno juice and mix.
Sprinkle on some waka cheese and allow it to melt.
Garnish with sliced pickled jalapeno if desired.
