Traditionally made from simple ingredients, these dumplings embody the warmth of home cooking and family gatherings. Today, variations exist across regions, with some incorporating different types of flour or fillings, but the essence remains the same: a delicious, comforting side dish that brings people together.

1

Peel 500g of potatoes and boil them in salted water for about 20 to 25 minutes, until tender.

2

Cut half a bread roll or a slice of toast into cubes.

3

Heat a pan over medium-high heat with 1 tablespoon of butter and a pinch of salt, and toast the bread cubes until nicely browned.

4

Peel the remaining 1.5 kilos of potatoes.

5

Prepare a separate bowl with cold water and add 1 teaspoon of vinegar.

6

Grate the potatoes into the vinegar water using a fine potato grater.

7

Place a clean dish towel in a larger bowl, and add the grated potato mixture.

8

Squeeze the mixture thoroughly to remove excess liquid; if it feels like cold mashed potatoes, continue squeezing until dry.

9

Drain the boiled potatoes and let them steam briefly.

10

Heat 100 ml of milk in a pot or microwave.

11

Mash the boiled potatoes well and pour off the potato water, collecting the starch that settles at the bottom.

12

In a bowl, combine the raw dumpling mixture with the hot milk, mashed potatoes, salt, grated nutmeg, and collected starch.

13

Quickly and thoroughly mix the mixture.

14

Shape the dumplings, putting about 2 to 3 bread cubes into each one.

15

Bring a large pot of salted water to a boil.

16

Add the first dumpling to the boiling water, then reduce the heat to low (level 3 on a scale of 9).

17

Ensure the dumplings float to the top, indicating the dough is correct; do not let them boil again during the cooking time.

18

Cook the dumplings with the lid slightly ajar for 25 to 30 minutes, checking occasionally.

19

After about 28 minutes, the dumplings should be done.
