Peel and dice potatoes. Bring water to a boil in a small pot. Add potatoes and cook until tender and cooked through. Strain and let cool.

In a large bowl, add ground pork, spices, salt, and a couple chipotles from the sauce. If you want more heat, add more chipotles and sauce from the can.

Slightly break apart potatoes with a fork. Add to the pork mixture. Mush everything together with your hands or a large spoon until everything comes together and the pork looks coated evenly in seasoning.

In a large cast iron pan or stainless steel pan, heat olive oil on medium-high heat. Add pork when hot and spread across the pan and let sear. Do not keep stirring.

Stir only every minute or so; you should begin to see the pork stick to the pan and crust up. That’s the caramelization we want to see.

Chorizo is cooked when there’s no raw pork and lots of brown bits in the pan, about 6-8 minutes.

Remove from heat and taste. Adjust seasoning with salt, pepper, and more chipotles for heat.

In the same cast iron pan, heat on low heat and add tortillas. Heat for about a minute, just on one side to warm up.

To plate, add tortilla, top with chorizo, onion, cilantro, and hot sauce. Serve lime wedge on the side.
