Mix flour, yeast, and sugar in a large bowl.
Add warm water and olive oil to the dry ingredients.
Stir until a sticky dough forms, then cover and let rise for 1-2 hours until doubled.
Gently fold in salt and malt without deflating the dough.
Transfer the dough to a floured surface and shape into a rectangle.
Cut the dough into pieces and dust with flour.
Place the pieces on a baking sheet lined with parchment paper.
Cover and let rise for another 30 minutes.
Preheat the oven to 450°F (230°C).
Sprinkle cornmeal on the baking sheet before placing the dough pieces.
Bake for 20-25 minutes until golden brown and hollow-sounding when tapped.
Cool on a wire rack before slicing.
