Cut two chicken breasts in half.
Chop one green bell pepper.
Chop one red bell pepper.
Slice one half of a red onion.
Chop up some cilantro and place it to the side.
Add 1 tablespoon of olive oil to a skillet with the peppers and onions.
Season with Creole seasoning, Adobo seasoning, garlic powder, onion powder, cayenne pepper, smoked paprika, salt, crushed red pepper, and parsley flakes. Mix well.

Add 14 ounces of diced tomatoes to the veggies and mix well.
Add 2 teaspoons of diced jalapenos and mix.
Add 1 tablespoon of cilantro and mix.
Add the shredded chicken to the mixture and mix well.
Add 1 cup of chicken broth and mix well. Taste and adjust seasoning with Creole seasoning, Adobo, garlic powder, onion powder, and smoked paprika.
To assemble the empanadas, place 1 tablespoon of cheese and 1 tablespoon of chicken mixture in the center of the empanada dough.
Fold the dough over to one side and press the edges together.
Press the edges with the back of a fork to seal.
Fry the empanadas for 3 minutes on each side or until golden brown.
