Pull out 2-3 handfuls of long soy curls from the bag.
Cover the soy curls with hot water and let them sit for 5-10 minutes to rehydrate.
Drain the soy curls, leaving a little moisture in the bowl.
Add cumin, onion powder, chili powder, dried cilantro leaves, ground black pepper, and about half a teaspoon of salt to the soy curls; toss to combine.
Crush a large garlic clove over the soy curls and toss again to coat with garlic flavor.
Spread the seasoned soy curls onto a baking tray and place in a Breville Smart Oven preheated to 400°F.
Bake the soy curls for 15 minutes until crispy on top but still soft on the bottom.
In an Instant Pot set to sauté, add chopped yellow onion and a little water to sauté the onion until tender.
Add the large garlic clove and three big handfuls of fresh spinach to the sautéed onion; season with cumin, chili powder, and cilantro leaves.
Toss the spinach mixture until wilted, adjusting the sauté heat as necessary to prevent burning.
Add 4 cups of store-bought salsa to the spinach mixture and stir to combine.
Squeeze lime juice into the mixture for added flavor.
Mash a can of partially drained black beans with a fork and set aside.
Prepare flour tortillas for assembly.
