Roast 6 poblano peppers until fully roasted.
Transfer the roasted peppers into a bag to sweat.
Roast 3 Roma tomatoes, 1 Chile serrano, and 2 garlic cloves.
Add the roasted ingredients into a blender along with 2 teaspoons of chicken bouillon, 1/8 teaspoon of black pepper, and 1/4 cup of water.
Blend the mixture until smooth.
Remove the skin from the peppers using a spoon, cut them open, and remove the seeds.
Slice the peppers into long strips.
Heat oil in a pan set to medium heat and fry half a white onion for about 1 minute.
Add in the pepper strips and cook for about 2 minutes.
Add the blended salsa mix to the pan and cook until it starts boiling.
Add 10 oz of queso fresco and let it simmer for about 3 minutes.
Serve hot.
