Char poblano peppers on a stove or charcoal grill for 2-3 minutes per side until blistered and blackened.
Place charred peppers in a plastic bag to steam for 5 minutes.

Cut the cleaned peppers into strips using a mandolin.
Heat vegetable oil in a pan and sauté sliced onions for 4-5 minutes until soft and translucent.
Add canned corn to the onions and stir.
Add the poblano strips to the pan and mix everything together, cooking for a few minutes.
Season with salt and pepper to taste, then turn off the heat.
Stir in Mexican cream or sour cream and crumbling cheese, mixing well.
Cover and let rest for 5 minutes until the cheese melts.
Serve in warm tortillas or over rice or chicken.
