Clean the pinto beans by removing any broken beans or rocks and rinse them in a fine mesh strainer.

Transfer the cleaned beans to a pressure cooker with 2 garlic cloves, 1 jalapeno, 1/4 of an onion, salt, black pepper, 1/4 teaspoon oregano, and ground cumin.

Cover the beans with water to the max line, about 10 cups, and pressure cook on high for 50 minutes.

Prepare homemade tortillas by mixing 1 cup corn masa and 1 cup flour with 1/2 teaspoon salt and 1/2 teaspoon baking powder.

Add 1 tablespoon of shortening or lard and mix with hands until crumbled.

Slowly add hot water until the dough is hydrated but not sticky, knead until soft, and cover with a damp towel to rest.

Roast the poblano peppers and hash peppers until charred, then transfer to a Ziploc bag to sweat.

Roast the Roma tomatoes, 1/4 of an onion, and jalapenos until charred, then transfer to a blender with 2 garlic cloves, 1/4 teaspoon ground cumin, and chicken bouillon or salt to taste, blending with 1/4 cup of water until smooth.

Peel the roasted poblano peppers, remove stems and seeds, and cut into strips.

Heat oil in a pan over medium heat, add half an onion cut into strips and cook for a couple of minutes.

Add the poblano strips and season with salt, cooking for another 2-3 minutes.

Add the salsa to the pan, mixing and bringing to a simmer, adjusting salt as needed, and simmer for another 3 minutes.

Add cubed cheese to the mixture, turn off the heat, cover, and let the cheese melt.

Make the tortillas using a tortilla press and cook on a comal for 25 seconds on one side, flip and cook for 30 seconds, then flip again and press to puff.
