Start cooking brown rice and check if it's done after a few minutes.
Once the rice is done, leave the lid on to keep it warm.
Prepare the salsa by dicing one large tomato into small pieces.
Chop one jalapeno without removing the seeds for spice.
Finely chop about a quarter of a medium white onion.
Chop a good amount of cilantro for the salsa and rice.
Squeeze half a lime into the salsa and mix in salt to taste.
Squeeze the other half of the lime into the cooked rice and mix, adding more lime if needed.
In a small pot, add a can of black beans and season with about two teaspoons of chili powder and ground cumin, mixing well.
Heat the black beans on the stove to blend the flavors together.
Remove kernels from two ears of corn and add them to a pan with olive oil, salt, and a squeeze of lime juice.
Roast the corn in the pan until it is toasty and fragrant.
Rinse and chop the hearts of romaine into bite-sized pieces.
Assemble the burrito bowl by layering cilantro lime rice at the bottom of a bowl.
Add a layer of chopped romaine on top of the rice.
Strain the black beans and add a layer on top of the romaine.
Add a layer of roasted corn on top of the beans.
Spoon some of the fresh salsa over the corn.
Slice an avocado, season with salt and pepper, and add slices to the bowl.
For those who want chicken, add grilled chicken on one side of the bowl.
Top with a dollop of sour cream in the center of the bowl and season with salt.
