Crack eggs into a bowl and whisk until fully combined.
Add heavy cream, salt, and white pepper to the eggs and whisk until smooth.
Heat butter in a non-stick skillet over low heat until melted.
Pour the egg mixture into the skillet and let it sit undisturbed for about 30 seconds.
Gently stir the eggs with a spatula, pushing them from the edges toward the center.
Continue to cook and stir the eggs for 2-3 minutes until they are softly set but still slightly runny.
Remove the skillet from heat and let the residual heat finish cooking the eggs.
Drizzle with truffle oil and sprinkle with grated parmesan cheese.
Garnish with chopped chives before serving.
