Mushroom Rice Pilaf

1 small yellow onion
2 cups chicken broth
1 cup mixed wild rice
2 tablespoons butter
1 tablespoon minced garlic
1 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon salt
10.5 ounce can condensed cream of mushroom soup

Peel and dice the small yellow onion.

Melt 2 tablespoons of butter in a stovetop pan over medium-high heat.

Add the diced onion and cook until softened, about 5 minutes.

Add 1 cup of uncooked mixed wild rice and cook for about 5 minutes.

Add 1 tablespoon of minced garlic and cook until fragrant, about 1 minute.

Add 2 cups of chicken broth, stir in the 10.5 ounce can of cream of mushroom soup, 1 teaspoon of dried thyme, 1/2 teaspoon of pepper, and 1/4 teaspoon of salt.

Allow the mixture to come to a boil.

Reduce heat to medium-low, cover with a lid, and allow to simmer while stirring occasionally for about 45 minutes, until all liquid has been absorbed.

Remove from heat and allow to rest for 10 minutes before serving.
