Ginger Ale

1 lb ginger
4 cups water
1/2 cup agave nectar (more or less to taste)
juice of 2 lemons (or limes)
sparkling water or club soda

Wash the ginger thoroughly. No need to peel it.

Roughly chop into manageable pieces and toss into your blender.

Add 4 cups of water and blend until smooth.

Pour into a large pot and bring to a boil over medium high heat. Let boil for about 10 minutes, until the mixture has reduced a little and has lessened in volume.

Let cool before handling and strain it a couple of times, using a spoon or silicone spatula to press the liquid out of the blended ginger. If it's completely cool, you can use a fine mesh cheesecloth.

Add agave nectar and lemon juice. Stir and add more to taste. Remember, you're diluting this with sparkling water, so make sure it's sweet enough for you.

Combine some ginger base with sparkling water. Fill your glass with LESS ginger base than you think you'll need - it's strong! Enjoy.
