Add 3 peeled, medium sized potatoes to a pot of water.
Season with a little salt, then bring to a boil and cook until tender.
Cutting the potatoes into even pieces beforehand would make this go faster.
When cooked through, drain the potatoes and set aside for later.
In a new pot or pan, start melting about 1 tbsp of butter.
Add one finely diced onion and cook until fragrant.
Season with a pinch of salt, then continue cooking until translucent.
Add chili powder and curry powder, followed by about 2 tbsp of water to help incorporate the spices.
Mix everything together, then set aside to cool slightly.
Mash the drained potatoes with a fork or potato masher, then season with a few pinches of salt and pepper to taste.
Add the seasoned onion mixture and stir until combined.
Add about 1/2 a cup of shredded mozzarella cheese and mix until incorporated.
Warm up a 6 inch tortilla to make it malleable.
Spread a thin layer of your favorite chili sauce over the surface of the tortilla.
Scoop on a spoonful of tomato pizza sauce and spread it out evenly.
Sprinkle a handful of shredded mozzarella cheese over half of the tortilla.
Scoop on about 2 tbsp of your potato filling and carefully spread it out.
Sprinkle green onion on top, followed by another handful of mozzarella cheese.
Carefully fold the tortilla in half, ensuring none of the filling spills out.
Transfer to a buttered skillet over medium heat.
Cook for about 3 minutes without checking, then flip the quesadilla.
Cook for another couple of minutes on the other side until the cheese oozes out and creates crispy bits.
Serve immediately.
