Authentic Mexican Flour Tortillas

Flour tortillas originated in northern Mexico, where wheat was more abundant than corn. Today, flour tortillas are enjoyed worldwide and have inspired countless variations, including those made with whole wheat or flavored with herbs and spices.

Olive oil is healthier while shortening is often cheaper.
In a bowl, add 3 cups of homemade all-purpose flour, baking powder, and salt.
Mix everything together until well incorporated.
Add 3 tsp of olive oil and mix until combined.
Create a well in the flour mixture and gradually add hot water, mixing with a spatula until a dough begins to form.
Use hands to mix the dough until it is soft and sticky.
Flour the working board and transfer the dough onto it.
Knead the dough for about 5 minutes until it no longer sticks to your hands.
Shape the dough and transfer it to a bowl with olive oil, cover with plastic, and let it rest for 10 minutes.
After resting, check the dough; it should be soft and stretchy.
Flour the working board again and shape the dough.
Cut the dough into 16 equal pieces based on the size of the vessel for toasting.
Roll each piece into a ball and repeat until all pieces are shaped.
Flour the surface and rolling pin, then roll each ball into a thin circle.
Preheat a fry pan and toast the rolled dough until it pops up, flipping to toast both sides.
Remove the toasted tortilla and repeat the process for the remaining dough.
For the second method, add 3 cups of homemade all-purpose flour, baking powder, and salt to a bowl.
Add 1 tbsp of margarine or butter and mix until combined.
Add hot water and mix until a dough begins to form.
Knead the dough for about 5 minutes until it is soft and sticky.
Shape the dough and transfer it to a bowl with butter, cover with plastic, and let it rest for 10 minutes.
After resting, check the dough; it should be soft and malleable.
Shape the dough and cut into pieces, rolling each into a ball.
