Vegetable Tamales

2 cups masa harina
1 1/2 cups vegetable broth
1/2 cup vegetable oil
1 tsp baking powder
1/2 tsp salt
1 cup corn kernels (fresh or frozen)
1 cup diced bell peppers
1 cup diced zucchini
1/2 cup chopped onions
1/2 cup chopped cilantro
1 tsp cumin
1/2 tsp chili powder
24 corn husks (soaked in warm water)

In a large bowl, mix masa harina, baking powder, and salt.

In a separate bowl, combine vegetable broth and vegetable oil. Gradually add this mixture to the masa harina, stirring until a dough forms.

In another bowl, mix corn, bell peppers, zucchini, onions, cilantro, cumin, and chili powder to create the filling.

Take a soaked corn husk, spread about 1/4 cup of masa dough on the husk, leaving space at the edges.

Add 2 tablespoons of the vegetable filling on top of the masa.

Fold the sides of the husk over the filling and then fold the bottom up to secure the tamale.

Repeat the process until all masa and filling are used.

Place the tamales upright in a steamer basket, cover with a damp cloth, and steam for about 1 hour or until the masa is firm.

Let the tamales cool slightly before serving.
