Rajas Con Crema

1 ½ pounds of poblano peppers
1 cup of corn
1 medium white onion, sliced
1 cup of Mexican cream or sour cream
½ cup of Oaxaca cheese or another melty cheese
1 tablespoon of olive oil
1 tablespoon of butter
½ cup of vegetable broth
Garlic powder, to taste
Salt and pepper, to taste

Roast the poblano peppers using your favorite method (oven, stove, or grill).

Put them in a bag, close it, and wrap it in a kitchen towel. Let them sit for 20 minutes to steam.

Peel off the skin, remove the seeds and stems, and slice the peppers into strips. Set them aside.

Heat the oil and butter in a pan.

Add the onions and cook over medium heat for about 5 minutes, until they’re soft and clear.

Add the sliced peppers and corn. Sprinkle with garlic powder, salt, and pepper. Stir and cook for 1 minute.

Pour in the cream and vegetable broth. Stir and simmer on low heat for around 5 minutes, until the sauce thickens and the veggies are soft.

Add the cheese and stir until it melts. Serve warm.
