Rajas Con Crema

6 Roasted Poblano peppers
1/2 large Onion
2 garlic cloves
1 cup of corn
8 oz crema Mexicana (or use 1 cup heavy cream + 1/4 cup sour cream)
3/4 cup queso chihuahua or any melty white cheese
1 Tbsp Butter
Pepper to Taste
1 tsp chicken bouillon or salt
2 large chicken breasts (butterfly)
Kinder buttery steak house seasoning
2 Tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp pepper flakes

Roast the Poblano peppers and slice them.

Chop the onion and garlic cloves.

In a skillet, melt the butter and sauté the onion and garlic until softened.

Add the roasted Poblano peppers and corn to the skillet.

Stir in the crema Mexicana (or heavy cream and sour cream) and queso chihuahua, mixing until the cheese is melted and creamy.

Season with chicken bouillon or salt and pepper to taste.

For the griddle chicken, season the butterfly chicken breasts with Kinder buttery steak house seasoning and other suggested seasonings.

Heat olive oil in a griddle pan and cook the chicken until fully cooked and golden brown.
