Ingredients

  • 2 cups mole sauce
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 bolillo rolls
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/2 cup crumbled queso fresco
  • 1 avocado, sliced
  • Salt to taste

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Season chicken breasts with salt and cook in the skillet for about 6-7 minutes on each side, or until fully cooked.
  3. 3Remove chicken from skillet and let it rest for a few minutes before slicing.
  4. 4In the same skillet, add mole sauce and bring to a simmer.
  5. 5Add sliced chicken to the mole sauce and coat well, cooking for an additional 5 minutes.
  6. 6While the chicken is simmering in the mole, slice the bolillo rolls in half and toast them lightly.
  7. 7Assemble the tortas by placing a generous amount of mole chicken on the bottom half of each roll.
  8. 8Top with shredded lettuce, diced tomatoes, sliced jalapeños, crumbled queso fresco, and avocado slices.
  9. 9Cover with the top half of the roll and serve immediately.

Bacalao Torta is a popular dish in various Latin American countries, often enjoyed during Lent and festive occasions.

Ingredients

  • 1 lb salted cod (bacalao)
  • 2 cups mashed potatoes
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 cup breadcrumbs
  • Oil for frying

Instructions

  1. 1Soak the salted cod in water for 24 hours, changing the water several times to remove excess salt.
  2. 2After soaking, drain the cod and boil it in fresh water for about 15 minutes until tender. Drain and let it cool.
  3. 3Flake the cod into small pieces, removing any bones and skin.
  4. 4In a large bowl, combine the flaked cod, mashed potatoes, chopped onions, bell peppers, garlic, eggs, parsley, black pepper, paprika, and cayenne pepper. Mix well until combined.
  5. 5Form the mixture into patties or cakes, about 2-3 inches in diameter.
  6. 6Coat each patty with breadcrumbs on both sides.
  7. 7Heat oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side or until golden brown.
  8. 8Remove the patties from the pan and place them on paper towels to drain excess oil.
  9. 9Serve hot with a side of your choice or a dipping sauce.
