Cilantro Lime Chicken

2 lbs. chicken breasts
2 large onions sliced
1 large bell pepper sliced
3 garlic cloves minced
1 cup chopped cilantro
Juice of 1 lime divided
Salt and pepper to taste
1 tsp oregano
1 tsp paprika
1 cup chicken stock
1 tbsp. unsalted butter

In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, black pepper, and red pepper flakes.

Place the chicken breasts in a resealable plastic bag or shallow dish.

Pour the marinade over the chicken, ensuring it is well coated.

Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Preheat the grill to medium-high heat.

Remove the chicken from the marinade and discard the marinade.

Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Remove the chicken from the grill and let it rest for 5 minutes before slicing.
