One Pot Cheesy Taco Pasta - EASY Taco Pasta Recipe!

Heat a large deep skillet over medium heat.

Add 1 pound of ground meat and chop it up as it cooks.

Once the meat is browned, add 1 chopped onion and cook until softened.

Add 1 tablespoon of minced garlic and stir.

Sprinkle half of a packet of taco seasoning over the meat and onion mixture, mixing well.

Add 1 can of Rotel tomatoes and green chilies to the skillet.

Add 1 can of drained sweet corn to the skillet.

Pour in 1 15-ounce can of tomato sauce and mix everything together.

Add the remaining taco seasoning to the mixture and stir well.

Add 3/4 cup of shredded cheddar cheese to the skillet and mix until melted.

Pour in 2 cups of water and then add 2 cups of medium-sized pasta shells, stirring to combine.

Cover the skillet and let it simmer on medium-low heat, checking occasionally.

After about 12 minutes, check the pasta and add more water if necessary (up to 3 cups total).

Once the pasta is cooked, turn off the heat and sprinkle with Mexican blend cheese and remaining cheddar cheese.

Add chopped fresh green onions on top.

Cover the skillet to let the cheese melt and cool slightly before serving.
