Cheesy Taco Pasta

1 tablespoon oil
1 pound ground beef
1 onion, chopped
1 red bell pepper, chopped (optional)
2 cloves minced garlic
1 can black beans, rinsed and drained
1 cup corn kernels (frozen, fresh, or canned)
2 cups pasta shells
2 cups beef broth
2 cups tomato sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1 cup shredded cheddar cheese
salt and pepper to taste

Heat a large skillet or Dutch oven over medium heat.

Add 1 tablespoon of oil to the pan.

Add 1 pound of ground beef to the pan and cook until browned, breaking it up with a spoon (about 5-6 minutes).

Add 1 chopped onion and 1 chopped red bell pepper (if using) to the pan and cook until the onion is translucent.

Add 2 cloves of minced garlic and cook for another 30 seconds.

Add 1 can of rinsed and drained black beans and 1 cup of corn kernels to the pan.

Add 2 cups of pasta shells to the mixture.

Pour in 2 cups of beef broth and 2 cups of tomato sauce.

Add 1 teaspoon of chili powder and 1 teaspoon of ground cumin, then stir well.

Bring the mixture to a boil, then reduce heat to medium and cover the pan.

Cook for 12-14 minutes, stirring every 2-3 minutes to prevent sticking.

Once pasta is tender, add 1 cup of shredded cheddar cheese and stir until melted.
