Roast 2 cloves of garlic in the oven at 180°C for 20 minutes with a bit of oil.

Prepare a sauce by blending 1/2 white onion, 2 cloves of roasted garlic, a healthy tablespoon of pickled jalapeños, juice of 1/2 lime, cracked sea salt, and cracked black pepper.

Blend the sauce until well combined.

Spoon the sauce over the diced tomatoes and mix it through.
