Healthy Vegetarian Mexican Casserole with Rice & Beans

Heat a skillet with oil.

Add onions, peppers, and diced jalapeno; sauté for about 4 minutes until they start to brown slightly.

Add corn, black beans, and fire roasted tomatoes.

Add spices: oregano, ground cumin, garlic powder, paprika, and a little Cayenne (optional).

Add lime juice and salt; mix well.

Add cooked brown rice and cheddar cheese; mix well.

Preheat oven to 400°F.

Grease a baking dish and transfer the rice and veggie mixture to it; smooth on top.

Sprinkle remaining cheddar cheese and add Mexican blend cheese on top.

Bake in the oven for about 12 to 15 minutes until the cheese is bubbling.

Cut into squares, garnish with cilantro and jalapeno, and serve.
