Sweet Potato Arugula Salad

2 medium sweet potatoes, peeled and cubed
4 cups arugula, washed and dried
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup feta cheese, crumbled
1/4 cup walnuts, chopped
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey

Preheat the oven to 400°F (200°C).

Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
