In a pot, heat 1 tablespoon of tallow over medium heat.

Add the chopped onions, minced ginger, and smashed garlic to the pot, and sauté for 45 seconds to 1 minute.

Add the chopped Shadow Benny to the pot and mix well.

Add the rinsed black beans to the pot along with 5 cups of water, 3 bay leaves, and 1 hot pepper.

Bring the mixture to a boil, then reduce the heat and cover the pot.

Allow the beans to cook on low heat for 90 minutes.

After 90 minutes, check the beans for doneness; they should be al dente.

Season the beans with MSG and salt to taste, then turn off the heat.
