Fermented apple slices have roots in various cultures, often used as a way to preserve fruit. This method not only extends shelf life but also enhances flavor through fermentation. Today, these tangy treats are enjoyed as snacks or toppings, reflecting a growing interest in fermentation and health-conscious eating.
Clean the apples and core them, keeping the skins and cores for apple cider vinegar.
Boil water on the stove to sanitize the jars.
Peel the apples completely.
Slice the apples into smaller pieces.
Sanitize the jars by placing them in boiling water.
Pack the apple chunks tightly into the sanitized jars.
Squeeze the juice of one lemon into each jar (4 lemons total).
Mix 1/2 quart of water with 1 teaspoon of sea salt and 1 tablespoon of cinnamon.
Pour the salt and cinnamon mixture into the jars, leaving about an inch of headspace.
Use weights to keep the apples submerged under the brine mixture, ensuring enough liquid covers the apples.
Cover the jars and place them in a warm spot (around 72 degrees Fahrenheit).
Burp the jars twice a day by opening them to release gas, then resealing them.
Test the apples periodically until they taste good, then refrigerate to stop the fermentation process.
