Traditionally, it is a staple in Punjabi households, often served with rice or flatbreads during family gatherings and celebrations. The dish is celebrated for its rich flavors and nutritious ingredients, making it a beloved comfort food. Instructions

  1. 1Soak chickpeas overnight in water.
  2. 2Drain and rinse the soaked chickpeas.
  3. 3Heat oil in a pot over medium heat until shimmering.
  4. 4Add cumin seeds and sauté until fragrant, about 30 seconds.
  5. 5Stir in chopped onions and cook until golden brown, about 5-7 minutes.
  6. 6Add minced ginger and garlic, cooking for 1-2 minutes until aromatic.
  7. 7Mix in chopped tomatoes and cook until soft, about 5 minutes.
  8. 8Add coriander powder, turmeric powder, red chili powder, and salt; stir well.
  9. 9Incorporate the chickpeas and enough water to cover them.
  10. 10Bring to a boil, then reduce heat and simmer for 30-40 minutes until tender.
  11. 11Stir in garam masala and adjust seasoning if necessary.
  12. 12Garnish with chopped cilantro and a squeeze of lemon juice before serving.

Ingredients

  • 1 cup chickpeas (soaked overnight)
  • 1/2 lb ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp salt
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp oil for frying
  • 4 cups water
  • 1/2 cup yogurt (for serving)
  • Lemon wedges (for serving)

Instructions

  1. 1Drain and rinse the soaked chickpeas, then boil them in 4 cups of water until tender, about 1 hour. Drain and set aside.
  2. 2In a large bowl, combine the ground meat, chopped onion, garlic, ginger paste, cumin, coriander, red chili powder, turmeric, garam masala, and salt. Mix well.
  3. 3Form the meat mixture into small balls (koftas) about the size of a golf ball.
  4. 4Heat oil in a frying pan over medium heat. Fry the koftas until browned on all sides, about 5-7 minutes. Remove and set aside.
  5. 5In the same pan, add the boiled chickpeas and sauté for a few minutes.
  6. 6Add the fried koftas to the chickpeas and mix gently.
  7. 7Cover and simmer for 10-15 minutes to allow the flavors to meld together.
  8. 8Serve hot, garnished with fresh cilantro, alongside yogurt and lemon wedges.
