Instructions

  1. 1Heat a skillet over medium heat.
  2. 2Place a tortilla in the skillet.

  4. 4Fold the tortilla over to cover the filling.
  5. 5Cook until the bottom is golden brown, about 3-4 minutes.

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup scrambled eggs
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp olive oil

Instructions

  1. 1Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. 2Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
  3. 3Add half of the scrambled eggs, sausage, bell peppers, and onions on top of the cheese.
  4. 4Sprinkle the remaining cheese over the filling and top with another tortilla.
  5. 5Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
  6. 6Carefully flip the quesadilla using a spatula and add the remaining olive oil to the skillet.
  7. 7Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
  8. 8Remove from the skillet and let it cool for a minute before cutting into wedges.
  9. 9Repeat the process with the remaining ingredients to make a second quesadilla.
  10. 10Serve warm with salsa or sour cream on the side.
