Measure 500 g of water and add it to the baking pan.
Add balsamic vinegar to the water.
Add spelt flour, rye flour, and bread flour into the pan in no specific order.
Make a dent in the flour and add 1 and 1/2 packages of instant yeast.
Set aside the salt and seeds to add later.
If using a regular oven, knead the mixture for about 8 minutes, then add salt and seeds and knead for another 1-2 minutes.
For the breadmaker, wait for the signal to add salt and seeds, then let it continue on the basic setting with a dark crust.
Let the dough proof until it has significantly increased in size, about 1 hour.
Knead the dough again and place it into a loaf pan, letting it rise for another 20-30 minutes.
Bake the bread in the oven until done, then remove it from the pan and cool on a wire rack.
