Warm the milk until lukewarm and add crumbled yeast and sugar, mixing well. Cover and let sit for about 5-10 minutes.
In a bowl, combine the remaining flour with salt and oil, then add the yeast mixture with milk. Knead until a compact dough forms that does not stick to the work surface.
Cover the dough and let it rise for about 30 to 45 minutes until doubled in volume.
Prepare a baking sheet lined with parchment paper, a rolling pin, and a mixture of melted butter and egg yolks for brushing.
Shape the dough into a thick roll and divide it into three parts: one large, one medium, and one small. Roll out the large piece into four equal parts, each the size of the baking sheet.
Brush each layer with the butter and egg yolk mixture, except for the top layer. Cut the layers into triangles, folding them outward.
Repeat the process with the medium piece, rolling it out and cutting it into smaller triangles, brushing with the butter mixture.
Form the small piece into a ball and place it in the center of the sunflower shape.
Add a splash of heavy cream to the butter mixture for brushing the top before sprinkling with sesame or black cumin seeds.
Let the sunflower shape rise for another 15 to 20 minutes, covered with a clean kitchen towel.
Preheat the oven to 180°C (356°F).
Bake the sunflower for 25 to 30 minutes.
