Homemade Spicy Chicken Soup

2 cloves of garlic, minced
1 Onion, diced
1 Bell Pepper, diced
3-4 Green chillies, sliced
1 Can of Peeled Plum tomatoes
Handful of orzo pasta
1 Lime, juiced
1 teaspoon of Coriander, chopped
Salt to taste
Pepper to taste
1 teaspoon of Chilli powder
1 teaspoon of Cumin powder
¼ teaspoon of Garlic powder
4-5 cups of Water
1 Vegetable stock cube
1 cup of Sweetcorn
1/3 cup of Green peas
Dried Chilli flakes to taste
Lemon juice, few drops
1 teaspoon of tomato puree
1 cup of cooked shredded chicken

In a soup pot, add the olive oil and the chilli flakes, let it heat up and start sizzling.

Once the chilli flakes start sizzling, add in the prepared onions, garlic, peppers and green chillies. Season with salt and pepper and cook down for 7-8 minutes.

Once the mixture starts cooking down, add in the dry spices, chilli powder, cumin powder, and garlic powder and stir well. Add in the tomato puree and stir for a minute.

Next, add in the canned tomatoes along with 2 ½ of water, stock cube, chicken, sweetcorn, salt, pepper and few drops of lemon juice and mix well. Bring the mixture up to a boil and then cover and simmer for 20 minutes, stirring occasionally.

After 20 minutes of simmering, add in the remaining water then add in a handful of the orzo pasta and crank the heat up to high and bring to a boil. Check the seasoning at this point and cook the pasta for 10 minutes or according to package instruction.

Once the pasta is cooked, add in the peas (optional) and cook for a further 2 minutes then switch off the flame. Garnish with coriander and a squeeze of fresh lime.
