Combine 320 ml lukewarm water, 200 g yoghurt, 630 g wholemeal flour, 2 tsp salt, and 1 tbsp honey in a mixing bowl.
Add 20 g fresh yeast to the mixture and knead into a softer dough.
Cover the dough and leave it to rise for 20-30 minutes.
Knead the dough again briefly after the first rise.
Grease a loaf tin with 25 g butter.
Pour the batter into the greased tin and spread it well.
Let the dough rest again for 10-20 minutes.
Sprinkle the dough well with water before baking.
Preheat the oven to 210°C (410°F).
Bake the loaf for approximately 35-40 minutes.
Turn the loaf out of the tin and let it cool down.
