1/4 Cup Green Onion White Part
1/2 Cup Bell Peppers
1 Jalapeño
1 TSP Chopped Garlic
1 TSP Ground Cumin
1 TSP Chilli Powder
1 Cup Enchilada Sauce
4 Cup Vegetable Broth
3/4 Cup Chopped Tomatoes / fire roasted
1/4 Cup Cooked Black Beans
1/3 Cup Uncooked Brown Rice
Salt to Taste
1/2 TSP Black Pepper Powder
Few Drops of Capsico Sauce
Corn flour slurry (1 TBSP + 3 TBSP Water)
2 TBSP Green Onion Green Part
2 TBSP Chopped Coriander

Bring large pot to medium high heat with 2 TSP Olive oil.

Sauté chopped garlic, spring onion white part, bell peppers, jalapeños until tender.

Add black pepper powder, chilli powder, salt, and sauté for an additional minute.

Next add vegetable broth, enchilada sauce, fire roasted tomatoes, black cooked beans.

Bring soup to a boil and then add soaked rice (remove excessive water).

Reduce heat to simmer and cook for 20 to 25 mins, stirring occasionally for the first few minutes to prevent rice from sticking.

Once rice is fluffed and tender, add corn flour slurry (adjust thickness according to your choice).

Add few drops of capsico/Tabasco sauce, and lastly add coriander and green onion green part.
