Spanish Garlic Zucchini

Rinse 2 zucchinis under cold running water and pat them completely dry.
Cut each zucchini into thick slices, about 1/2 inch thick (1.25 centimeters).
Season the zucchini slices with sea salt on both sides and place them in a colander to sit for 30 minutes.
After 30 minutes, pat the zucchini slices dry with paper towels to remove excess water.
Season the zucchini slices with freshly cracked black pepper on one side.
Heat a large fry pan on medium-high heat for 2-3 minutes without adding any fat.
Add 2 tablespoons of extra virgin olive oil to the hot pan.
Add the zucchini slices in a single layer and cook in batches, frying for 2.5 minutes on each side until golden.
Remove the fried zucchini and place them on a dish lined with paper towels to absorb excess oil.
Lower the heat to low-medium and keep the pan hot.
In the same pan, add 1 tablespoon of extra virgin olive oil and the garlic and parsley mixture.
Mix continuously for 20-25 seconds until the garlic is aromatic but not overcooked.
Remove from heat and transfer the garlic and parsley mixture over the fried zucchini.
